I agree with Peter's statement. The main thing is to give a realistic delivery time and if you fun a little short on time, you may have to burn some midnight oil. I know I have pulled a few allnighters just to hit deadlines before.

Most peoples reputation is in the CRAFTSMANSHIP. That being said, I think I would rather be in the shop making sure the final product is up to standard and hire a minimum wage crew to demo.

I would think that is plenty. I normally use .030.

What do you have your depth clearance set for. I have run into this before and just increased the clearance. The first time it happened, I had to belt sand every tenon so that they did not bottom out in the dado. Not a lot of fun having to do this a several hundred parts.

For me, maintenance would be the main factor. I like linseed oil or Mineral oil on a rubbed out piece of furniture but on a counter top, I would think the 2K poly would be less maintenance, but either would work.

I would use a 2K Poly In a dull sheen. Apply 3 coats 3-5 mills thick and sand with 320 inbetween coats. One thing about this stuff. You must be set up to use it and ready. You only have a pot life of 8 hrs and then it is rock hard.
