Been going through the training on doors and don't see my answer so -
is it possible to design and build a 7 piece door in ecabs like the one in this picture?

The Door/Drawer Designer does not have that option. If it is for appearances sake, you could create that with a Face Frame within the Face Frame and MDF doors with the raised profile.
If you do it that way, then you should be able to resize the cabinet. For sure, double-check the sizes, if you were wanting to have accurate cut lists.
