I want to be able to show a client their kitchen on eCabinets and have the ability to change the colour of the doors quickly while they wait. What is the best way? Is it a matter of having doors saved in a variety of colours and whilst in custom layout :- select all cabinets - right click - adjust cabinet features - change - doors ?? This means that I would have to have every coloured door saved. Is this the only way?

Your description of changing doors was correct, but you don't need to save each color or material choice.
