When using the part editor on a display board or panel, do the profiled edges show up in the nest area? I have some panels I have made and when I nest them, I do not see the profile cuts.

Yes they will cut, if you use control nesting (you wont see it in the nest) it will use the default tooling you have set up in the profile modeler.
